Ms. Cook's Table: Arugula Pesto

Arugula Pesto

Ingredients:
  • 1 large bunch of arugula, trimmed and coarsely chopped (about 1 cup)
  • 2 tablespoons extra virgin olive oil
  • 1 minced garlic clove
  • 2 teaspoons fresh lemon juice
  • Kosher salt and freshly ground black pepper
  • Grated hard cheese, if desired
Steps:

Combine all ingredients in a mortar and pestle or mash with a fork. Many uses will ensue.
